ORIENTAL STEAK 'N PEPPER
10 oz. boneless sirloin steak
2 tsp. peanut or vegetable oil
1 med. green bell pepper, seeded and thinly sliced
1/2 c. sliced onion
1 garlic clove, minced
3/4 c. water
1 packet instant beef broth and seasoning mix
1 tbsp. soy sauce
2 tsp. cornstarch
1 med. tomato, cut into eighths
1/8 tsp. pepper

On rack in broiling pan, broil steak 2 to 4 inches from heat source until rare, about 3 minutes on each side (broil thicker steaks farther away from heat); cut steak across the grain into thin slices and set aside.

In 10 inch skillet heat oil; add green pepper, onion, and garlic and saute until onion is translucent and pepper is tender crisp. Add steak slices and saute for 1 minute; add water and broth mix and bring liquid to a boil. In small bowl, combine soy sauce and cornstarch, stirring to dissolve cornstarch; stir constantly, until tomatoes are just cooked and mixture is slightly thickened; sprinkle with pepper and serve immediately.

Makes 2 servings.
