CORNBREAD PIE 
1/2 bell pepper, chopped
1/2 med. sized onion, chopped
1 lb. ground beef
1 can whole grain corn
1 can tomatoes
1 med. can Ranch style beans
1/4 c. picante sauce, optional
Cornbread mixture for 1-9" pan

Saute bell pepper and onion in 1 tablespoon oil in iron skillet. Add ground beef and cook until lightly browned. Add corn, tomatoes, beans and picante sauce. Remove from heat and spread cornbread mixture over top. Bake in 400 degree oven until cornbread is done. Serve from skillet with green salad.
