COD CREOLE 
1 lg. onion, chopped
1 lg. green pepper, chopped
1 lg. clove garlic, minced
2 tbsp. oil
1 (16 oz.) can tomatoes, cut up
1 bay leaf, crumbled
1/2 tsp. each thyme & salt
1/4 tsp. pepper
1 lb. frozen cod or other fish fillets

In large skillet, over medium heat, saute onion, green pepper and garlic in oil for about 5 minutes or until tender. Stir in tomatoes, bay leaf, thyme, salt and pepper. Cover and simmer 15 minutes. Meanwhile let fish stand at room temperature to thaw slightly, then cut into 1" cubes. Add to sauce; cover and simmer 10 to 15 minutes or until fish flakes easily with fork. Serve over rice. Makes 4 servings.
