GRAPEFRUIT SALAD | |
3 c. fresh grapefruit sections 1 c. grapefruit juice 1 c. sugar 3 env. unflavored gelatin (Knox) 1 (8 oz.) cream cheese, softened 3/4 c. chopped pecans 3/4 c. mayonnaise 3 tbsp. milk Save all juice as you section grapefruit. Add water if needed to make 1 cup juice. Dissolve gelatin in 1/2 cup cold water. Bring juice to boil, add gelatin and sugar. Stir to dissolve, pour over grapefruit. Arrange half of grapefruit sections in 9 inch square dish. Pour half of juice, sugar mixture over and refrigerate until very firm. Leave rest out of refrigerator. Mix cream cheese, mayonnaise, milk, then nuts. After first layer is firm, spread this mixture over. Chill until this is firm. Then arrange last of grapefruit sections and gently pour gelatin mix over top. Chill. Cut in 12 squares. Decorate with dab of mayonnaise and cherry. |
