GREEN CHICKEN ENCHILADAS 
1 doz. tortillas
1 chopped onion
Grated Monterey Jack cheese
Grated cheddar cheese
1 chicken, cooked, cut into bite-size pieces

Soften tortillas in warm chicken broth. Fill with Jack cheese, onion, chicken and roll enchilada style in shallow baking dish (lightly greased). Cover with green sauce. Bake at 350 degrees for 30 minutes. Cover with cheddar cheese.

GREEN SAUCE:

1 pkg. frozen chopped spinach, cooked & well drained
2 cans mushroom soup
2 cans (4 oz.) chopped green chilies
1/4 tsp. salt
1 pt. sour cream

Mix together, blend together in blender. Pour over enchiladas.
