SOFT MOLASSES COOKIES | |
4 1/2 c. sifted flour 2 tsp. ginger 2 tsp. cinnamon 1 tsp. allspice 1 c. shortening 1 c. sugar 1 egg, unbeaten 1 tsp. salt 1 c. molasses 3/4 c. coffee 3 tsp. baking soda 1/4 c. hot water Mix and sift flour, salt and spices. Cream shortening and sugar until fluffy. Stir in unbeaten egg and molasses. Add the flour mixture gradually with the coffee. Dissolve soda in hot water and stir into batter. Drop batter by teaspoon 2" apart on greased pan. Bake in moderate oven, 350 degrees, for 10 minutes. Frost with Lemon Butter Frosting: 2 c. powdered sugar 3 tbsp. butter, melted Add lemon juice, use lemon juice not bottled. Spread easily. |
