MOMMA NESTA'S ITALIAN WEDDING COOKIES | |
1 tsp. pure vanilla 1 doz. eggs 1 c. sugar pinch of salt 1 c. Crisco or vegetable shortening 4 tbsp. baking powder Use enough flour to make dough pliable Preheat oven to 350°F. Mix above ingredients together to make a soft, pliable dough. Don't overmix or cookies will be tough. Slice small portions of dough and roll to create a coil about 12 inches long and the thickness of your finger. Cut into 3 lengths and tie each piece into a knot. Bake on a greased baking sheet for 12 to 15 minutes at 350°F. Cover cookie with icing (see recipe below) when cool. ICING FOR WEDDING COOKIES: 5 (1 lb.) boxes powdered sugar 2 tbsp. pure lemon extract Use enough milk to make a med. thickness icing Dip each cookie into icing, using a fork. Place on a platter to dry. Decorate cookies with raisins, cherries, nuts or coconut. This makes a large amount of icing. You can cut the recipe in half if you like, or any leftover may be refrigerated for up to 2 weeks. Sometimes we flavor the cookies with anisette or almond instead of vanilla. You can also flavor the icing to match. Makes at least 60 cookies. |
