SHRIMP CREOLE 
1 lb. fresh or frozen shrimp, thawed, peeled & deveined
1/4 c. chopped celery
1/4 c. chopped onion
2 tbsp. finely chopped salt pork or bacon
1 (16 oz.) can whole tomatoes
1/4 c. chili sauce
1 tsp. sugar
1/2 tsp. dried thyme
1/2 tsp. beef flavored gravy base
1 clove garlic, minced
Bowl hot cooked rice
Salt & pepper

Cook shrimp in boiling water, salted, 1 to 3 minutes or until done, drain, set aside. In saucepan, cook celery, onion and salt pork until celery is tender, about 5 minutes. Add tomatoes (cut up), chili sauce, sugar, thyme, gravy base and garlic, season to taste. Cover and simmer 30 minutes. Add shrimp. Heat through. Serve on dish of hot rice. Serves 4.
