ARABIC CUMIN COLESLAW 
3 c. shredded cabbage
Salt
1 c. unsweetened orange juice
2 tbsp. lemon juice
2 tsp. cumin seeds
1/2 tsp. sugar (optional)
Several drops bottled liquid hot red pepper sauce (Tabasco)

Wash cabbage, drain, sprinkle liberally with salt and let stand 1 hour. Rinse well and drain; squeeze out liquid. Add orange juice, lemon juice, cumin, sugar and pepper sauce, mix well. (Will keep for a week, tightly covered in the refrigerator.) Serves 4, 47 calories per serving.
