BROILED FLOUNDER 
2 to 3 lbs. flounder
1/4 c. lemon juice
Salt and pepper to taste
1/4 c. salad oil
1/2 tsp. prepared mustard

Clean fish, leaving on heads and tails. Rub with salt, inside and out; brush with salad oil. Place on well greased broiler or shallow pan and cut 3 or 4 gashes through skin. Cook under broiler for 15 minutes or until fish flakes when tried with fork. Turn and broil other side until skin is brown and crisp. (If fish is too large, do not turn.) Remove to large platter. Combine oil, lemon juice, and mustard; beat with fork until blended and thick. Pour over broiled fish. Serve warm or cold.
