ZUCCHINI BREAD 
4 eggs
2 c. sugar
1 c. oil
3 1/2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. grated zucchini
1 c. walnuts, chopped
1 1/2 tsp. vanilla
1 c. raisins

Beat eggs, add sugar and oil. Add dry ingredients and mix. Add rest of ingredients and mix after each addition. Place in 2 greased loaf pans. Bake at 350 degrees for approximately 70 minutes. Test with pick. Can be baked in small loaves, using 4 pans. Bake small loaves 50 minutes. Remove from oven and let set 10 minutes. Turn out on rack to cool.
