CHEESY RICE BALLS 
4 c. hot cooked rice
1 1/2 c. grated sharp Cheddar cheese
2 eggs, slightly beaten
1 1/2 tsp. salt
1/4 tsp. ground black pepper
1/4 c. finely chopped onion
3 tbsp. creole mustard
8 drops Tabasco sauce
2 c. soft bread crumbs
1 tbsp. paprika

Combine ingredients, except bread crumbs and paprika. Chill. Form into small balls using 1 tablespoon mixture for each. Blend bread crumbs and paprika. Roll balls in crumbs. Deep fat fry at 375 degrees until golden brown, for about 3 minutes. Drain on absorbent paper. Serve hot. Makes about 5 dozen.
