CHICKEN RO - TEL | |
1 (5 lb.) hen, boiled & chopped, can use lg. chicken 1 stick butter 2 lg. bell peppers 2 lg. onions 2 (4 oz.) cans mushrooms 1 can Ro-Tel tomatoes 1 lb. Velveeta cheese Salt & pepper to taste 1 (7 oz.) pkg. vermicelli 2 tbsp. Worcestershire sauce 1 can English peas Use 1 1/2 quarts chicken broth to cook vermicelli; do not drain. In skillet, melt butter; cook bell peppers and onions. Blend Ro-Tel in blender, then add to chicken broth and vermicelli. Cook about 10 minutes. Add onions, bell peppers and drained peas. Add chopped chicken and chunked cheese and mushrooms. Cook until cheese melts. Put in 2 casseroles. Top with a few crushed Doritos. Bake at 350 degrees for 30-40 minutes. Makes a large amount. You can freeze one casserole for baking later. |
