SWEET AND SOUR POT ROAST CANARY
ISLAND STYLE
 
1 lg. (4-5 lbs.) boned pot roast
3 tbsp. oil
1 c. onion slices
1 clove garlic, minced
3/4 c. hot water or vegetable juice
1 bay leaf
2 tbsp. vinegar
1 tbsp. brown sugar
3 tbsp. ketchup
3/4 tbsp. salt

Brown meat in oil. Add onions and brown. Add remaining ingredients. Cover. Simmer until tender, 4-4 1/2 hours. Remove bay leaf before serving.
