ROASTED PEPPERS 
3 lg. red peppers
2 cloves garlic, minced
Olive oil
1/2 tsp. basil

Char peppers over flame or under broiler, until skin is blackened. Cool and peel and remove seeds. Cut into strips. Mix remaining ingredients. Add peppers, chill for 2 hours. Great on steaks, subs or any sandwich.
