RICE AND RAISIN PUDDING 
3 eggs, beaten
1/8 tsp. cinnamon
1/8 tsp. nutmeg
2 c. milk, scalded
1/3 c. sugar
1/4 tsp. salt
1/2 tsp. vanilla
1/2 c. raisins
1 c. cooked rice

Prepare baking dish by greasing generously with butter.

Combine eggs, sugar, salt, vanilla, cinnamon and nutmeg. Add scalded milk slowly, stirring constantly. Mix well.

Fold in the cooked rice and raisins. Pour into the prepared dish. Set dish in a pan of hot water. Bake at 350 degrees for 45 minutes or until a knife inserted comes out clean.

Remove dish from hot water and serve hot or cold. Serve plain or with whole milk. Yield 6 servings.
