FRUIT FILLED COFFEE CAKE 
1 c. salad oil
1 3/4 c. sugar
4 eggs
1 tsp. vanilla
1/2 tsp. almond flavoring
3 c. flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1 lg. can fruit pie filling (blueberry, cherry, etc.)

Stir together oil and sugar. Add eggs, beating after each. Add flavorings. Sift dry ingredients together and add to oil mixture a small amount at a time. Reserve about 1 1/2 cups batter. Spread remaining batter in a greased and floured 15 x 10 1/2 inch jelly roll pan. Spread pie filling on top. Drop reserved batter on top. Bake at 350 degrees for 45 minutes. When cool, dribble a thin icing made with powdered sugar and milk over the top. Can be baked in two round cake pans and cut in wedges.
