TURKEY DRESSING | |
2-3 lb. ground lamb or beef (amount depends on turkey size) 4 onions 1/2 bunch parsley 1 stalk celery 12-15 Saltine crackers, crushed 2 eggs, beaten Butter 1/2 c. pine nuts (Koukounair), chopped or diced 1/2 c. walnuts, chopped or diced 2/3 c. cooked chestnuts, chopped or diced 2 tbsp. tomato paste Salt, pepper, and cinnamon to taste Chop onions, parsley, and celery into small pieces. Brown in butter; add ground meat, salt, pepper, and cinnamon and tomato paste. Let meat brown thoroughly. Add more butter when needed. Combine chopped nuts and crackers. Add to browned meat and cook for about 10 minutes. Add more butter so mixture won't burn. Let cool a little, then thoroughly stir in beaten eggs. Stuff turkey and roast turkey for required time per pound. |
