BOURBON CARROTS 
5 tbsp. butter
5 med. carrots, peeled and sliced into thin rounds
1 med. onion, thinly sliced
2 tbsp. bourbon
1 tsp. (or more) light brown sugar

Melt butter in heavy large skillet over medium-low heat. Add carrots and onion and cook 5 minutes, stirring often. Mix in bourbon and sugar. Cover and cook until carrots are tender, stirring occasionally, about 5 minutes.
