SCHNITZEL BEANS | |
4 slices of bacon 1 qt. string beans 3 med. onions, sliced 2 c. tomatoes, chopped 1 tsp. salt 1/4 tsp. pepper 1 c. hot water Dice the bacon and fry until crisp. Slice the onions and fry until soft. Cut the beans into small 1 inch pieces and brown them slightly with the bacon and onions. Add the tomatoes, seasoning and boiling water. Cover and cook very slowly until beans are tender. Add water, if necessary, so there will be a little sauce to serve with the beans. |
