POTATO KUGELI 
6-8 lg. potatoes
1 med. onion, diced
1/2 lb. bacon, diced
3 eggs, well beaten
Dash of pepper
2 tsp. salt
1 can evaporated milk

Fry onion and bacon together. Let cool. Pare potatoes and grate into milk stirring occasionally. Mix all ingredients together. Pour into 13 x 9 inch well greased pan. Bake at 400 degrees for 20 minutes; then reduce heat to 375 degrees for 1 hour. Serve with sour cream or applesauce.
