SPANISH TORTILLA 
6 lg. size potatoes, sliced
4 eggs
1 lg. yellow onion, sliced
Salt
1/4 c. olive oil

Heat oil in frying pan. Add sliced potatoes and onions; fry, but do not brown. Remove from pan and cool. Place potatoes and onions in mixing bowl and mix with 4 beaten eggs and salt.

Lightly grease pan and fry egg mixture until eggs are set, turn pan over onto a plate and slide back into frying pan until brown. Cut in wedges and serve with bread. Serves 4.
