SAVANNAH RED RICE | |
1/4 lb. bacon 1/2 c. onion, chopped 1/2 c. celery, chopped 1/4 c. green pepper, chopped 2 c. rice, uncooked 2 (1 lb.) cans tomato puree 3 tsp. salt 1/4 tsp. pepper 1 tsp. sugar 1/8 hot pepper sauce In large skillet, fry bacon until crisp; crumble. Saute onion, celery, and green pepper in bacon grease until tender, then add rice, tomatoes, bacon, salt and pepper, and hot sauce; cook for 10 minutes. Preheat oven to 350 degrees. Pour mixture into large oiled casserole dish and cover tightly and bake for 1 hour. |
