SPINACH SALAD 
Spinach & Lettuce (as much as you want for a lg. bowl, about 1/2 of each)
Fresh mushrooms
4-5 oz. Feta cheese
Bacon bits (or cooked bacon crumbled)
Tomatoes, if wanted

DRESSING:

1/4 c. cider vinegar
1/2 c. oil
2 tbsp. sugar
1 tsp. dry mustard
1 tbsp. poppy seeds

Arrange in 2 or 3 layers. Mix dressing in covered container. Pour over salad just before serving.
