POTATO OMELET 
1 tbsp. butter
1 med. potato, peeled and diced
1/3 c. minced onion
2 tbsp. diced green pepper
1/4 c. catsup
1/2 tsp. salt
Dash black pepper
4 eggs, lightly beaten

In a large skillet, melt. Add potato, onion, and green pepper. Cook 20 minutes, stirring occasionally. Stir in catsup, salt, and pepper. Cook 3 minutes, stirring often. Pour eggs into skillet, tilting pan so that eggs flow around potato mixture. Cook until set. Loosen edges. Fold omelet in half. Slide onto serving dish.
