SPINACH-MUSHROOM SALAD 
1 1/2 lbs. fresh spinach
1/2 lb. fresh mushrooms
4 slices bacon, cooked & crumbled
1 avocado, cut in chunks

DRESSING:

1 tsp. sugar
1/2 c. vegetable oil
3 tbsp. white wine vinegar
1 tbsp. onion, grated
2 tsp. Dijon mustard
1 tsp. salt
Freshly ground pepper

1. Remove stems from spinach. Wash thoroughly and pat leaves dry. Tear into bite size pieces.

2. Quickly rinse mushrooms in cold water. Drain well and cut into thin slices.

3. Combine salad ingredients in large bowl. Add dressing and toss until well coated. Sprinkle with bacon.

DRESSING: Combine all ingredients and shake well to blend.
