RAW SPINACH AND MUSHROOM SALAD 
Juice of 1/2 lemon
1/4 c. soy sauce
2 tsp. sugar
2 tbsp. peanut oil
1/4 c. sesame seeds
1 1/2 lbs. spinach, fresh, washed & dried, stems removed
1/2 lb. mushrooms, raw, sliced

Mix lemon juice, soy sauce, sugar and oil in a small saucepan and stir over gentle heat until sugar dissolves. Let cool. Toast sesame seeds in a dry frying pan over medium heat until they color and start to pop. Crush seeds between 2 pieces of waxed paper with a rolling pin and stir them into cooled sauce. Pour over spinach and mushrooms in a large bowl and toss very well. Yields 6 servings.
