CORN BAKE 
1 (16 oz.) can drained corn
1 (5 1/3 oz.) evaporated milk
1 c. grated cheese (like Monterey Jack or Swiss)
2 beaten eggs
2 tbsp. onion, minced
1 c. bread crumbs
2 tbsp. butter, melted

Mix first 5 ingredients in 1 quart casserole. Mix bread crumbs and melted butter and sprinkle on top. Bake at 350 degrees for 25 to 30 minutes. Enjoy. This recipe can be doubled.
