CORN SQUASH BAKE 
Preheat oven to 350 degrees. Cut in 1 inch rounds 3 to 4 medium zucchini or other summer squash unpeeled. Cook in small amount of boiling salted water until tender. Drain and mash with fork. Saute:

1 tbsp. butter
1 sm. onion, chopped

Combine:

Mashed zucchini
Sauteed onion
2 c. corn, fresh cut, cooked or frozen (thawed)
1 c. shredded Swiss or Cheddar cheese
1/2 tsp. salt
2 beaten eggs

Turn into 1 quart greased casserole. Bake for 40 minutes or until set.
