CORN BREAD BAKE 
2 med. zucchini
1/2 lb. bulk sausage
1/4 c. chopped onion
1 (8 oz.) pkg. corn muffin mix
1/2 c. shredded cheddar cheese

Shred 1/3 cup zucchini, set aside. Cut remaining zucchini into slices. Brown sausage. Remove sausage and reserve drippings. To drippings, in skillet, add zucchini slices and onion. Cover. Cook medium-low until zucchini is slightly soft (about 5 minutes).

In greased cake pan starting in the center, arrange all zucchini slices in a circle. Prepare muffin mix, stir in shredded zucchini, cooked sausage and cheese. Spread mixture over zucchini slices. Bake at 350 degrees for 25 to 30 minutes until top is golden. Loosen sides with knife and turn onto serving plate.
