BLACKBERRY COBBLER | |
1 1/2 c. flour 1/4 tsp. salt 5 tbsp. unsalted butter 4 tbsp. vegetable shortening 4-5 tbsp. ice water 6 c. blackberries 3/4 c. sugar 4 tbsp. butter Heavy cream, whipped cream or ice cream Chill the butter and shortening thoroughly in the freezer. Preheat oven to 425 degrees. Have ready a 9 inch round pan 2 or more inches deep. Prepare the pastry dough first then refrigerate it while you get everything else ready. Cut flour and salt into the butter and shortening until thoroughly mixed. Add the ice water and mix until the dough just begins to cling together, about 10 seconds. Roll the dough in a large circle and line pan. Add the berries, sprinkle with sugar and dot with butter. Bring the edges of the pastry over the berries; there will be a little space in the center. Bake 45 minutes. Top with whipped cream or ice cream. |
