PEARS CARDINAL | |
6 fresh pears 2 c. water 1 1/2 c. sugar 2 tsp. vanilla 1/4 tsp. salt Cardinal Sauce 1. Peel the pears. 2. Mix water, sugar, vanilla and salt in a saucepan and bring to a boil. 3. Add whole pears and simmer, turning pears occasionally in syrup, for 20 to 25 minutes. 4. Cool pears in the syrup. Remove pears. 5. Place pears upright on individual serving plates and spoon sauce over each pear. Serves 6. CARDINAL SAUCE: 3/4 lb. strawberry jam (or any other red jam) 1 tbsp. lemon juice 1 tbsp. light corn syrup Combine ingredients and heat in top of a double boiler over hot water, stirring until smooth. Remove from heat and chill in refrigerator. |
