HOOSIER SPICE CAKE | |
1/2 c. Crisco 1 c. sugar 2 eggs 2/3 c. cut up prunes 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. allspice 2/3 c. buttermilk 1 1/3 c. sifted flour 1/2 tsp. baking soda 1/2 tsp. salt 1/4 tsp. baking powder 1/2 to 1 c. chopped nuts (optional) Blend Crisco, sugar and eggs. Stir in prunes and buttermilk. (Mixture will look curdled.) Combine dry ingredients and nuts and add to Crisco mixture; beat well. Spread in a greased and floured 8 or 9 inch square pan. Bake at 350 degrees (8 inch square pan for 40-50 minutes, 9 inch pan for 35-40 minutes). Cake is done when center springs back when touched lightly. |
