POTATO DUMPLINGS 
2 1/2 c. flour
4 c. mashed potatoes (cold)
2 eggs
3 tsp. salt

Work all ingredients by mixing with 2 knives, like pie crust. Form small balls and drop in boiling water. Cover dumplings until they begin to boil and then remove the cover. Cook 25 to 35 minutes. Remove from the water. Makes 12 to 15 dumplings.

Tastes great reheated in the microwave. Serve with gravy, sauerkraut or cut up and mix in stew.

Since microwave ovens vary in power, you may need to adjust your cooking time.
