FRIED RICE 
2 c. cooked rice (can use instant)
2 tbsp. salad oil
1/2 c. sliced mushrooms
1 c. chopped green onion
1/2 c. chopped celery
1/4 c. chopped carrots
3 tbsp. soy sauce
1 c. cubed, cooked ham, chicken, or shrimp
2 beaten eggs
6 slices bacon, fried crisp

Prepare rice. Heat oil in skillet or wok. Add all vegetables and saute to almost tender. Add beaten eggs and mushrooms, then add bacon and rice, then stir and toss 5 minutes.
