FLORENTINE STUFFING 
1/2 (10 oz.) pkg. frozen chopped spinach
1/4 c. water
2 tbsp. butter
1 tbsp. dry minced onion
2 c. croutons or crouton stuffing mix
1 oz. thinly sliced pepperoni, diced (1/4 c.)
1 egg, beaten
1/4 c. grated Parmesan cheese

Defrost spinach; place in sieve and press to remove excess liquid. Bring water, butter and onion to boil in saucepan. Turn off heat; lightly stir in croutons, spinach and pepperoni until combined. Fold in egg and Parmesan cheese.

Microwave Directions: Microwave water, butter, onion in 2-cup glass measure on high 1 minute or until butter is melted. Proceed as directed for Roasted Rock Cornish Hen's microwave directions.

Since microwave ovens vary in power, you may need to adjust your cooking time.
