SUE'S LEMON CAKE 
1 box Duncan Hines lemon cake mix
1 tbsp. butter
1 egg
1 1/2 c. hot water

LEMON FILLING:

1 1/2 c. sugar
2/3 c. flour
1/4 c. lemon juice
Grated rind of one lemon

Bake layers as directed on cake mix; you can make 2 layers or 3 small. I have best results baking 2 layers and then slicing them to make 4 layers.

LEMON FILLING: Mix flour and sugar well. Add water slowly. Add slightly beaten egg. Add lemon juice, rind and butter. Cook on low heat or double boiler, stirring constantly until thick. Let cool before putting on cake. This makes good sauce for gingerbread, spice cake or plain cake.

Plain cake - use 2 tablespoons of flour instead of the 2/3 cup.
