SUE'S REAL SOUTHERN CORN BREAD 
2 c. cornmeal (not mix)
1 tsp. baking soda
1 tsp. salt
1 tsp. sugar (or equivalent sweetener)
2 tbsp. bacon grease
1 egg
2 c. buttermilk

Preheat oven to 425 degrees. Mix cornmeal, baking soda, salt, and sugar. Drop bacon grease into medium blackened cast iron skillet. Turn on range top burner to high and heat until grease is smoking. Add egg to mix, stir, and add 2 cups buttermilk. Beat 1 minute, then turn into smoking skillet. Place immediately in hot oven and cook 20-25 minutes until brown on top. Turn out onto plate and serve hot with butter.
