SPEEDY SPONGE CAKE 
2 eggs
1 c. sugar
1 c. enriched flour
1/8 tsp. salt
1 tsp. baking powder
1 tbsp. butter
1/2 c. hot milk

Beat eggs until light and thick. Slowly add sugar and beat with a spoon for 5 minutes or with an electric mixer for 2 1/2 minutes. Fold sifted dry ingredients into mixture all at once. Melt butter in hot milk and add all at once (all of this folding in should take but 1 minute). Bake in a wax paper lined 8 inch square pan at 350 degrees for 30 minutes. Top with:

BAKED-ON FROSTING:

Beat 1 egg white with 1/4 teaspoon baking powder. Gradually beat in 1/2 cup brown sugar; spread over hot cake. Sprinkle with 1/4 cup chopped nuts. Bake at 350 degrees for 15 minutes or until lightly browned.
