BATTER FRIED FISH 
1 lb. fish fillets
2/3 c. flour, sifted
1/4 tsp. salt
1 tsp. baking powder
1 well beaten egg
1/3-1/2 c. milk
Oil

Sift flour and add all other ingredients. The batter should be of a consistency to cling to the fish and coat it evenly. If too thin, add a little more flour; if too heavy, add a little more milk. Stir well until smooth. Coat the fish with the batter and deep fry. Season to taste and garnish with paprika, fresh parsley, wedges of lemon or tartar sauce.
