LOW CAL POKE CAKE 
1/4 c. butter
2 tsp. sugar
1 egg
1/2 c. plain non-fat yogurt
1 1/4 c. sifted flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. vanilla

Cream butter and sugar add egg and beat. Add yogurt, beat, add flour and rest of ingredients. Beat. Bake in 8 x 8 inch pan (spray with Pam) and bake at 350 degrees for 20 to 25 minutes. Cool then poke with fork (lots).

Make up 1 box of sugar-free Jello (4 serving size) according to directions on box, when cool add 5 packages of Equal and slowly pour over cake, chill then eat. May be topped with 1 teaspoon of Cool Whip with each serving.
