CHICKEN 'N RICE SALAD 
1 pkg. long grain & wild rice with herbs and seasoning
12 oz. can chunk white chicken, drained
3 tbsp. sliced olives
3 tbsp. chopped onion
3/4 c. diced, peeled, fresh tomatoes
1/4 c. Italian dressing

Prepare rice; mix following package directions and chill. Cut chicken into bite size pieces. Combine salad ingredients (all). Pour dressing over salad and toss to coat. Cover and chill. Serves 4 to 6.
