MEATLOAF FOR LARGE FAMILIES 
2 lbs. ground beef
1 c. quick Quaker oats
2 eggs
1 tbsp. poultry seasoning
1 onion or 1 tbsp. onion powder
1 tsp. garlic powder
1 tbsp. oregano
Milk
1 green pepper, chopped (optional)
1 or 2 c. tomato sauce (optional)
1 can mushroom pieces (optional)

Mix beef, oats, eggs, poultry seasoning, onion, garlic and oregano in large bowl. Add small amounts of milk while mixing until moist. Do not add too much milk. Add any optional ingredients desired and mix well.

Using clean hands, knead the mixture thoroughly. Pour into meatloaf pan. Bake at 350 degrees for approximately 45 minutes. Before removing from oven, check for doneness by making sure sides have pulled away from the pan. Serves 6-8.
