BROTHER FRANK'S® GRITS 
2 c. grits
8 c. water, salted
1 med. onion
1 lb. Cheddar cheese, shredded
1 lb. diced Velveeta
1 stick diced butter
6 eggs, beaten
Sprinkle paprika on top

Cook grits in boiling, salted water until quite dry. To the HOT grits, add the chopped onion, Cheddar cheese, Velveeta, and butter. Beat until cheeses and butter are all melted. Add the eggs and stir. Pour into 11x16 inch pan. Bake at 350 degrees about 1 1/2 hours. Serves 30. Recipe may be cut in half. Casserole freezes well.
