UP NORTH CRUSTY POTATO MUFFINS 
1/4 c. butter
1/4 c. sugar
1 egg
1 c. milk
2 c. sifted cake flour
1/2 tsp. poultry seasoning
4 tsp. baking powder
1/2 tsp. salt
1/4 c. melted butter
1/2 c. finely crushed chips

In a bowl, cream butter until fluffy. Stir in sugar. Beat in egg. Stir in milk. Stir in flour, poultry seasoning, baking powder and salt. Beat until smooth. Spoon batter into greased muffin tins, filling 2/3 full. Bake at 375 degrees for 20 to 25 minutes. Remove from muffin pans, while still warm and roll muffins in melted butter then in chips.
