RICE PUDDING 
4 c. cooked rice
4 eggs
1 1/2 tsp. vanilla
2 1/2 c. sugar
1/2 lb. (1 c.) butter
2 c. milk
Raisins
Dash cinnamon
Salt
Nutmeg (optional)

Cook until eggs are cooked, 350 degrees, about 45 minutes to 1 hour. Also may substitute bread for rice for bread pudding. Top with lemon sauce or vanilla sauce if desired.
