FRESH BROCCOLI SALAD 
1 bunch fresh broccoli, cut up fine
2 to 3 ribs celery, chopped fine
1 sm. onion, minced
1 green or red pepper, chopped fine
1 or 2 apples, unpeeled, cut or chopped
1/2 c. raisins
1 can water chestnuts, sliced

Use whole broccoli head, cut off ends that look too dry or pithy. Toss all ingredients together in very large bowl. Can be cut day before serving. Use Granny Smith golden delicious or Jonathan apples that do not turn yellow. Needs a crisp tart apple. Not a mushy type. Cover and refrigerate for at least 1 hour before serving or overnight. Before serving, add dressing.

DRESSING:

1/2 c. Miracle Whip or mayonnaise, can be low cal.
1/4 c. sugar
1/4 c. vinegar

Stir together and pour over veggies before serving. Serves 25 to 30. When covered can be stored and used 2 to 3 days later. If for small group, cut down accordingly. It's not necessary to use exact amounts of anything.
