ITALIAN CREAM CAKE | |
1/2 c. Crisco 2 c. flour 2 c. coconut 1 stick butter 1 c. buttermilk 1 1/2 c. chopped pecans 2 c. sugar 1 tsp. baking soda 5 eggs Cream shortening and sugar; add egg yolks. Add flour wit milk, add coconut and pecans. Beat egg whites stiff and fold in. Bake at 325 degrees about 45 minutes or until done. Makes 3 layers. ICING: 8 oz. pkg. cream cheese 1 box powdered sugar 1 stick butter 1 tsp. vanilla Have cream cheese and butter at room temperature. Mix together with mixer then gradually add powdered sugar and vanilla. Sprinkle coconut and pecans on top. |
