SHRIMP CASSEROLE 
1 c. chopped onions
1 c. chopped celery
1 c. chopped bell peppers
4 minced garlic cloves
1 tbsp. parsley flakes
1/2 c. green onion tops, chopped
3 c. peeled, deveined shrimp
3 c. cooked rice
1 can cream of mushroom soup
3 slices white bread, soaked in milk
1 stick butter
1/2 c. hot water
For garnish use butter and bread crumbs

Saute onions, celery, bell pepper and garlic in one stick butter. Add parsley flakes, green onion tops, soup, shrimp, rice, bread and hot water. Season to taste. Cook 8 to 10 minutes. Pour in a 2 quart casserole, top with bread crumbs and pats of butter. Bake at 350 degrees for 30 to 35 minutes.
