HONEY LEMON UN-CHEESECAKE 
2 pkgs. (10.5 oz.) silken or firm tofu, drained (Mori-Nu brand)
1/2 c. honey
3 tbsp. plus 1 tsp. lemon juice
1 1/4 tsp. vanilla
3 tbsp. vegetable oil
1 tbsp., 1 tsp. lemon peel, shredded
1 (8 inch) graham cracker pie shell (any that you like)
1 c. ground hazelnuts, optional

In a food processor or blender, combine tofu, honey, lemon juice, vanilla and vegetable oil. Whip on high 1 minute. Add lemon peel. Whip on low 30 seconds.

Prepare graham cracker pie shell, using your favorite recipe. For added flavor, add 1 cup hazelnuts to pie shell ingredients. Pour mixture into pie shell and bake in a preheated 350 degree F. oven for 1 hour. Cool, chill and serve topped with your favorite fruit.
